  • Rinse the basmati rice in cold water and soak for 30 minutes.
  • In a large pot, heat the oil. Add the sliced onions and sauté until they turn golden brown.
  • Add ginger paste, garlic paste, and chopped green chilies. Sauté for a minute.
  • Add coriander powder, turmeric powder, garam masala, and salt to taste. Mix well and sauté for a minute.
  • Add mixed vegetables and chicken pieces. Mix well and cook for 5-7 minutes until the chicken is partially cooked.
  • Add soaked rice and mix well. Add 2 cups of water and mix well.
  • Cover the pot with a lid and cook on low flame for 30 minutes.
  • Once the rice is cooked, garnish with chopped cilantro leaves and serve hot.
