  • Preheat the oven to 400°F.
  • Line a baking sheet with parchment paper.
  • Divide the ice cream into four small bowls or ramekins and freeze for at least 30 minutes.
  • In a large mixing bowl, sift together the cake flour, baking powder, and salt.
  • In a separate mixing bowl, cream together the butter and granulated sugar until light and fluffy.
  • Add the egg yolks and vanilla extract to the butter mixture and beat until well combined.
  • Gradually add the flour mixture to the butter mixture and beat until just combined.
  • In a separate mixing bowl, beat the egg whites with an electric mixer until they start to foam.
  • Add the cream of tartar to the egg whites and continue to beat until stiff peaks form.
  • Gradually add the 2 tablespoons of granulated sugar to the egg white mixture and beat until the mixture is glossy and stiff peaks form.
  • Fold the egg white mixture into the cake batter with a spatula.
  • Remove the ice cream bowls from the freezer and invert them onto the prepared baking sheet.
  • Spoon the cake batter over the ice cream, covering it completely.
  • Use a spatula to smooth the cake batter over the ice cream and make sure there are no gaps.
  • Bake for 8-10 minutes, or until the meringue is golden brown.
  • Remove from the oven and serve immediately.
