Ingredients
- 1 pint Vanilla Ice Cream
- 1/2 cup Cake Flour
- 1/2 tsp Baking Powder
- 1/4 tsp Salt
- 1/4 cup Unsalted Butter Softened
- 1/2 cup Granulated Sugar
- 2 Egg Yolk Large
- 1 tsp Vanilla Extract
- 2 Egg Whites Large
- 1/4 tsp Cream Of Tartar
- 2 tbsp Granulated Sugar
Instructions
- Preheat the oven to 400°F.
- Line a baking sheet with parchment paper.
- Divide the ice cream into four small bowls or ramekins and freeze for at least 30 minutes.
- In a large mixing bowl, sift together the cake flour, baking powder, and salt.
- In a separate mixing bowl, cream together the butter and granulated sugar until light and fluffy.
- Add the egg yolks and vanilla extract to the butter mixture and beat until well combined.
- Gradually add the flour mixture to the butter mixture and beat until just combined.
- In a separate mixing bowl, beat the egg whites with an electric mixer until they start to foam.
- Add the cream of tartar to the egg whites and continue to beat until stiff peaks form.
- Gradually add the 2 tablespoons of granulated sugar to the egg white mixture and beat until the mixture is glossy and stiff peaks form.
- Fold the egg white mixture into the cake batter with a spatula.
- Remove the ice cream bowls from the freezer and invert them onto the prepared baking sheet.
- Spoon the cake batter over the ice cream, covering it completely.
- Use a spatula to smooth the cake batter over the ice cream and make sure there are no gaps.
- Bake for 8-10 minutes, or until the meringue is golden brown.
- Remove from the oven and serve immediately.
