  • Start by lighting your grill and letting the coals burn down until they are glowing red.
  • Season the meat generously with salt, making sure to cover both sides.
  • Place the meat on the grill, starting with the short ribs, as they will take the longest to cook. Cook the ribs for 45 minutes to 1 hour on each side, until they are well browned and crispy.
  • Next, add the flank steak to the grill, cooking for 15-20 minutes on each side, until it is medium-rare.
  • While the meat is cooking, add the sliced peppers and onions to the grill, cooking them until they are charred and soft.
  • Lastly, add the chorizos to the grill, cooking for 10-15 minutes until they are fully cooked.
  • Once everything is cooked, let the meat rest for a few minutes on a cutting board, then slice it thinly against the grain.
  • Serve with chimichurri sauce and a drizzle of olive oil.

Notes

Slow Cooker Instructions (Optional):
If you don't have a grill, you can still make an authentic Asado in a slow cooker. Simply season the meat as directed above and place it in the slow cooker with sliced onions and peppers. Cook on low for 8-10 hours, until the meat is tender and falling off the bone. Serve with chimichurri sauce and a drizzle of olive oil.
