- 2 tbsp Olive Oil
- 1 Yellow Onion Diced
- 2 Garlic Cloves Minced
- 2 Carrots Diced
- 2 Celery Stalks Diced
- 1 Zucchini Diced
- 1 can Diced Tomatoes (14 Oz)
- 4 cup Vegetable Broth
- 1 cup Cannellini Beans Cooked, (Or Any Other White Beans)
- 1 tsp Dried Basil
- 1 tsp Dried Oregano
- 1/2 tsp Dried Thyme
- Salt To Taste
- Pepper To Taste
- 1 cup Macaroni Or
- Ditalini Pasta
- Parmesan Cheese Freshly Grated, For Serving
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat. Add the diced onion and minced garlic. Sauté until the onions are translucent and the garlic is fragrant, about 3-4 minutes.
- Add the diced carrots, celery, and zucchini to the pot. Stir and cook for another 5 minutes until the vegetables start to soften.
- Pour in the diced tomatoes and vegetable broth. Add the cooked cannellini beans, dried basil, dried oregano, dried thyme, salt, and pepper. Stir well to combine.
