- 4 Large Lobster Tails (About 1 1/2 Pounds Total), Cooked And Meat Removed
- 1/2 cup Mayonnaise
- 1 tbsp Freshly Squeezed Lemon Juice
- 2 tsp Dijon Mustard
- 2 tbsp Fresh Chives Finely Chopped
- Salt To Taste
- Pepper To Taste
- 4 Hot Dog Buns Split-Top
- 2 tbsp Unsalted Butter Melted
- Lettuce Leaves For Serving
Instructions
- In a large pot of boiling water, cook the lobster tails for about 8-10 minutes until the shells turn bright red. Remove the lobster tails from the pot and let them cool. Once cooled, remove the meat from the shells and chop into bite-sized pieces.
- In a medium-sized bowl, whisk together the mayonnaise, lemon juice, Dijon mustard, chopped chives, salt, and pepper until well combined. This is your lobster dressing.
- Add the chopped lobster meat to a large mixing bowl and pour the lobster dressing over it. Gently toss until the lobster meat is evenly coated.
- Preheat a grill or skillet over medium heat. Brush the insides of the split-top hot dog buns with melted butter. Toast the buns on the grill or skillet until golden and crisp, about 2 minutes per side.
- To assemble the Lobster Rolls, place lettuce leaves on the bottom of each toasted bun. Spoon the lobster mixture onto the lettuce and close the buns.
