Ingredients
- 4 Large Portobello Mushroom Caps
- 1/4 cup Chopped Onion
- 1/4 cup Chopped Bell Pepper
- 1/4 cup Chopped Zucchini
- 1/4 cup Chopped Tomato
- 1/4 cup Crumbled Feta Cheese
- 1 tbsp Olive Oil
- 1 tbsp Balsamic Vinegar
- 1 tsp Dried Basil
- 1/2 tsp Salt
- 1/4 tsp Black Pepper
Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet with foil and coat with cooking spray.
- In a mixing bowl, whisk together olive oil, balsamic vinegar, dried basil, salt, and black pepper.
- Remove the stems from the portobello mushroom caps and brush them with the olive oil mixture.
- In a separate mixing bowl, combine chopped onion, bell pepper, zucchini, tomato, and crumbled feta cheese.
- Stuff each portobello mushroom cap with the vegetable and cheese mixture.
- Place the stuffed mushrooms on the prepared baking sheet and bake for 20 minutes or until the mushrooms are tender and the cheese is melted and bubbly.
