  • Rinse the glutinous rice in a sieve under cold running water until the water runs clear.
  • Soak the rice in water for at least 30 minutes or up to 4 hours.
  • Drain the rice and place it in a rice cooker.
  • Add 1 1/2 cups of water and cook the rice according to the rice cooker's / instant pot instructions.
  • In a medium saucepan, combine the coconut milk, sugar, and salt. Cook over medium heat, stirring constantly until the sugar dissolves. Remove from heat and set aside.
  • Once the rice is cooked, transfer it to a mixing bowl. Add the coconut milk mixture and stir well to combine. Let the rice cool to room temperature.
  • Cut the mangoes into thin slices and arrange them on a serving dish.
  • Spoon the sticky rice onto the serving dish alongside the mango slices.
  • Serve the Mango Sticky Rice at room temperature or chilled.
