  • Wash and soak the idli rice and urad dal along with fenugreek seeds for 6-8 hours.
  • Grind the soaked rice and dal in a mixer grinder to form a smooth batter. Add water as needed. The batter should be slightly thick.
  • Add salt to taste and mix well. Let the batter ferment overnight or for 8 hours.
  • In a pan, heat oil. Add mustard seeds and let them splutter.
  • Add chopped onions and sauté until they turn golden brown.
  • Add chopped green chili, turmeric powder, and salt to taste. Mix well.
  • Add mashed potatoes and mix well. Cook for 5-7 minutes.
  • Add chopped cilantro leaves and mix well.
  • In a dosa tawa, heat some oil. Pour a ladle full of dosa batter and spread it in a circular motion to form a thin crepe.
  • Add a spoonful of the potato filling in the center of the dosa.
  • Roll the dosa and serve hot with coconut chutney and sambar.
