  • Preheat the oven to 375°F (190°C).
  • In a large pot or Dutch oven, heat the olive oil over medium heat.
  • Add the onion and garlic, and sauté until fragrant and translucent, about 2-3 minutes.
  • Add the carrots, celery, and lentils, and sauté for another 5-7 minutes, until the vegetables are slightly softened.
  • Add the vegetable broth, tomato paste, thyme, salt, and pepper, and stir to combine.
  • Bring the mixture to a boil, then reduce the heat to low, cover the pot with a lid, and simmer for 20-25 minutes, or until the lentils are tender and the vegetables are fully cooked.
  • Meanwhile, place the cubed sweet potatoes in a pot of boiling water and cook until tender, about 10-15 minutes.
  • Drain the sweet potatoes and mash them with the almond milk until smooth.
  • Transfer the lentil mixture to a baking dish and spread the sweet potato mash on top.
  • Bake in the preheated oven for 15-20 minutes, or until the sweet potato mash is slightly golden and crispy on top.
  • Serve the shepherd's pie hot, garnished with fresh herbs if desired.
