  • Preheat the oven to 375°F.
  • Cook the macaroni according to the package directions. Drain and set aside.
  • In a steamer basket, steam the cauliflower and carrots for 10-15 minutes or until tender.
  • In a blender or food processor, puree the steamed cauliflower and carrots until smooth.
  • In a large skillet, melt the butter over medium heat. Add the flour and whisk until smooth.
  • Gradually whisk in the milk until smooth. Add the garlic powder, salt, and black pepper and stir to combine.
  • Stir in the pureed cauliflower and carrots and the shredded cheddar cheese until the cheese is melted and the sauce is smooth.
  • Add the cooked macaroni to the skillet and stir to coat with the cheese sauce.
  • Spray a baking dish with cooking spray and transfer the mac and cheese to the dish.
  • Bake for 10-15 minutes or until heated through and lightly browned on top.
