  • In a large pot, bring water to a boil.
  • Add rinsed red lentils to the pot and let simmer for 20-25 minutes, or until the lentils are tender.
  • In a skillet, heat vegetable oil over medium-high heat.
  • Add diced onion and minced garlic to the skillet and cook until fragrant and translucent, about 3-4 minutes.
  • Add ground cumin, ground coriander, turmeric, cayenne pepper, and salt to the skillet. Stir well to combine.
  • Add the onion and spice mixture to the pot with the cooked lentils. Stir well to combine.
  • If desired, use an immersion blender or transfer the mixture to a blender and blend until smooth.
  • Add lemon juice to the pot and stir well.
  • Serve hot, garnished with chopped cilantro leaves if desired.
