Ingredients
- 12 Lasagna Noodles
- 1 tbsp Olive Oil
- 1/2 Onion Diced
- 2 Garlic Cloves Minced
- 1 can Crushed Tomatoes (28 Ounces)
- 1/4 cup Tomato Paste
- 2 tps Dried Oregano
- Salt & Pepper To Taste
- 1 cup Ricotta Cheese
- 2 cups Shredded Mozzarella Cheese
- 2 cups Mixed Vegetables (Such As Zucchini, Bell Peppers, And Mushrooms)
- Parsley Leaves Chopped; (Optional)
Instructions
- Preheat the oven to 375°F.
- Cook lasagna noodles according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium-high heat.
- Add diced onion and minced garlic to the skillet and cook until fragrant and translucent, about 3-4 minutes.
- Add crushed tomatoes, tomato paste, dried oregano, salt, and pepper to the skillet. Stir well to combine and let the sauce simmer for 10-15 minutes.
- In a mixing bowl, combine ricotta cheese and 1 cup of shredded mozzarella cheese.
- In another mixing bowl, combine mixed vegetables and remaining shredded mozzarella cheese.
- In a 9x13 inch baking dish, spread a layer of tomato sauce on the bottom.
- Add a layer of cooked lasagna noodles on top of the tomato sauce.
- Add a layer of the ricotta cheese mixture on top of the lasagna noodles.
- Add another layer of cooked lasagna noodles on top of the ricotta cheese mixture.
- Add a layer of the mixed vegetable and mozzarella cheese mixture on top of the lasagna noodles.
- Repeat layers of tomato sauce, lasagna noodles, ricotta cheese mixture, and mixed vegetables until all ingredients are used.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 25-30 minutes.
- Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
- Garnish with chopped parsley leaves if desired and serve hot.
