  • Preheat the oven to 375°F.
  • Cook lasagna noodles according to package instructions until al dente. Drain and set aside.
  • In a large skillet, heat olive oil over medium-high heat.
  • Add diced onion and minced garlic to the skillet and cook until fragrant and translucent, about 3-4 minutes.
  • Add crushed tomatoes, tomato paste, dried oregano, salt, and pepper to the skillet. Stir well to combine and let the sauce simmer for 10-15 minutes.
  • In a mixing bowl, combine ricotta cheese and 1 cup of shredded mozzarella cheese.
  • In another mixing bowl, combine mixed vegetables and remaining shredded mozzarella cheese.
  • In a 9x13 inch baking dish, spread a layer of tomato sauce on the bottom.
  • Add a layer of cooked lasagna noodles on top of the tomato sauce.
  • Add a layer of the ricotta cheese mixture on top of the lasagna noodles.
  • Add another layer of cooked lasagna noodles on top of the ricotta cheese mixture.
  • Add a layer of the mixed vegetable and mozzarella cheese mixture on top of the lasagna noodles.
  • Repeat layers of tomato sauce, lasagna noodles, ricotta cheese mixture, and mixed vegetables until all ingredients are used.
  • Cover the baking dish with aluminum foil and bake in the preheated oven for 25-30 minutes.
  • Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  • Garnish with chopped parsley leaves if desired and serve hot.
