Ingredients
For The Dough:
- 2 cups All-Purpose Flour
- 1 tsp Salt
- 1/2 cup Water
- 1/4 cup Vegetable Oil
- 1 Egg
For The Filling:
- 1 lb Ground Beef
- 1/2 Onion Chopped
- 1/2 Red Bell Pepper Chopped
- 2 Garlic Cloves Minced
- 1 tsp Paprika
- 1/2 tsp Cumin
- 1/2 tsp Salt
- 1/4 tsp Black Pepper
- 1/4 cup Green Olives Chopped
- 1 Hard-Boiled Egg Chopped
Instructions
- In a large mixing bowl, combine the flour and salt. Add the water, oil, and egg, and mix until a smooth dough forms. Knead the dough for a few minutes until it is elastic, then cover it with plastic wrap and refrigerate for 30 minutes.
- In a skillet, cook the ground beef over medium-high heat until browned. Add the onion, bell pepper, and garlic, and cook until the vegetables are soft.
- Add the paprika, cumin, salt, and black pepper to the skillet, and mix well. Remove from heat and let cool.
- Preheat the oven to 375°F (190°C). Roll out the dough on a floured surface to about 1/4 inch thickness. Cut out circles using a cookie cutter or a cup.
- Place a spoonful of the beef filling on one half of each dough circle. Add a few chopped olives and a piece of boiled egg on top.
- Fold the other half of the dough circle over the filling and seal the edges by pressing with a fork.
- Place the empanadas on a greased baking sheet and bake for 25-30 minutes, or until golden brown.
- Serve hot and enjoy!
