- 2 tbsp Vegetable Oil
- 1 lb Beef Chuck Cut Into Cubes
- 1 Onion Chopped
- 3 Garlic Cloves Minced
- 2 Carrots Peeled And Sliced
- 2 Potatoes Peeled And Cubed
- 1 cup Butternut Squash Peeled And Cubed
- 1 cup Green Beans Trimmed And Cut In Half
- 1 cup Corn Kernels
- 1/2 tsp Ground Cumin
- 1/2 tsp Paprika
- Salt & Pepper To Taste
- 4 cups Chicken Broth OR
- Beef Broth
- 1/4 cup Cilantro Chopped , For Garnish
Instructions
- Heat the vegetable oil in a large pot or Dutch oven over medium-high heat.
- Add the beef to the pot and cook, stirring occasionally, until browned on all sides, about 5 minutes.
- Add the onion and garlic to the pot and cook, stirring occasionally, until the onion is translucent, about 5 minutes.
- Add the carrots, potatoes, butternut squash, green beans, and corn to the pot. Stir to combine.
- Add the cumin, paprika, salt, and pepper to the pot. Stir to combine.
- Pour in the chicken or beef broth and bring the mixture to a simmer.
- Reduce the heat to low and let the Cazuela simmer for 45-60 minutes, or until the vegetables are tender and the beef is cooked through.
- Serve the Chilean Cazuela in bowls and garnish with chopped cilantro.
