For the shells:

  • In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, salt, and cinnamon.
  • Use a pastry cutter or your fingers to cut the butter into the flour mixture until it's crumbly.
  • Add the egg yolk and white wine to the mixing bowl and stir until the dough comes together.
  • Turn the dough out onto a floured surface and knead it for a few minutes.
  • Roll the dough out to a thickness of 1/8 inch.
  • Use a cookie cutter or a small bowl to cut the dough into circles.
  • Roll each circle of dough around a cannoli form, sealing the edges with a little bit of water.
  • Heat the vegetable oil in a deep fryer or large pot to 350°F.
  • Carefully place the dough forms into the hot oil and fry for 1-2 minutes on each side or until they're golden brown.
  • Remove the shells from the oil using a slotted spoon or spider strainer and place them on a paper towel-lined plate to drain excess oil.
  • Let the shells cool completely before filling.

For the filling:

  • In a mixing bowl, beat the ricotta cheese, powdered sugar, and vanilla extract with an electric mixer until smooth.
  • Fold in the mini chocolate chips.
  • Place the filling in a pastry bag fitted with a star-shaped pastry tip.
  • Carefully pipe the filling into the cooled cannoli shells from both ends.
  • Dust the cannoli with powdered sugar before serving.
