Ingredients
For The Shells:
- 1 cup All-Purpose Flour
- 2 tbsp Granulated Sugar
- 1/4 tsp Salt
- 1/4 tsp Cinnamon
- 1/4 cup Unsalted Butter Cut Into Small Pieces
- 1 Egg Yolk
- 1/4 cup Dry White Wine
- Vegetable Oil For Frying
- Powdered Sugar For Dusting
For the filling:
- 1 cup Ricotta Cheese
- 1/2 cup Powdered Sugar
- 1/2 tsp Vanilla Extract
- 1/4 cup Mini Chocolate Chips
Instructions
For the shells:
- In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, salt, and cinnamon.
- Use a pastry cutter or your fingers to cut the butter into the flour mixture until it's crumbly.
- Add the egg yolk and white wine to the mixing bowl and stir until the dough comes together.
- Turn the dough out onto a floured surface and knead it for a few minutes.
- Roll the dough out to a thickness of 1/8 inch.
- Use a cookie cutter or a small bowl to cut the dough into circles.
- Roll each circle of dough around a cannoli form, sealing the edges with a little bit of water.
- Heat the vegetable oil in a deep fryer or large pot to 350°F.
- Carefully place the dough forms into the hot oil and fry for 1-2 minutes on each side or until they're golden brown.
- Remove the shells from the oil using a slotted spoon or spider strainer and place them on a paper towel-lined plate to drain excess oil.
- Let the shells cool completely before filling.
For the filling:
- In a mixing bowl, beat the ricotta cheese, powdered sugar, and vanilla extract with an electric mixer until smooth.
- Fold in the mini chocolate chips.
- Place the filling in a pastry bag fitted with a star-shaped pastry tip.
- Carefully pipe the filling into the cooled cannoli shells from both ends.
- Dust the cannoli with powdered sugar before serving.
