For the cake:

  • Preheat the oven to 350°F.
  • Line two 8-inch round cake pans with parchment paper.
  • In a mixing bowl, whisk together the all-purpose flour, cocoa powder, baking powder, baking soda, and salt.
  • In a separate mixing bowl, cream together the butter and granulated sugar until light and fluffy.
  • Add the eggs and vanilla extract to the butter mixture and beat until well combined.
  • Gradually add the flour mixture to the butter mixture, alternating with the milk, and beat until just combined.
  • Divide the batter evenly between the two prepared cake pans.
  • Bake for 25-30 minutes, or until a toothpick inserted in the centre of the cake comes out clean.
  • Let the cakes cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.

For the filling and topping:

  • In a mixing bowl, beat the heavy cream, powdered sugar, and vanilla extract with an electric mixer until stiff peaks form.
  • Place one cake layer on a serving plate and spread a layer of cherry pie filling over the top.
  • Top the cherry filling with a layer of whipped cream.
  • Place the second cake layer on top of the whipped cream and spread a layer of cherry pie filling over the top.
  • Use an offset spatula to spread the remaining whipped cream over the top and sides of the cake.
  • Top the cake with chocolate shavings and with cocktail cherries and refrigerate for at least 1 hour before serving.
