For the filling:

  • In a food processor, pulse the walnuts, almonds, granulated sugar, and ground cinnamon until coarsely ground.
  • Set aside.

For the syrup:

  • In a small saucepan, combine the granulated sugar, water, honey, and cinnamon stick.
  • Heat the mixture over medium heat, stirring occasionally, until the sugar has dissolved.
  • Reduce the heat to low and let the mixture simmer for 10-15 minutes, or until it has thickened slightly.
  • Remove the cinnamon stick and set the syrup aside.

For the baklava:

  • Preheat the oven to 350°F.
  • Brush the bottom and sides of a 9x13 inch baking dish with melted butter.
  • Place 1 sheet of phyllo dough in the bottom of the baking dish and brush it with melted butter.
  • Repeat this process with 5 more sheets of phyllo dough, brushing each sheet with melted butter.
  • Sprinkle half of the nut mixture evenly over the top of the phyllo dough.
  • Repeat the layering process with the remaining phyllo dough and melted butter, brushing each sheet with melted butter.
  • Sprinkle the remaining nut mixture over the top of the phyllo dough.
  • Brush the top layer of phyllo dough with melted butter.
  • Using a sharp knife, cut the baklava into diamond shapes.
  • Bake for 35-40 minutes, or until the baklava is golden brown.
  • Remove the baklava from the oven and immediately drizzle the syrup over the top.
  • Sprinkle the finely chopped pistachios over the top of the baklava.
  • Let the baklava cool to room temperature before serving.
