Ingredients
- 8 Corn Tortillas Small
- 8 Eggs
- 15 oz Black Beans Drained & Rinsed
- 1 cup Rice Cooked
- 1 cup Tomato Sauce
- 1/2 cup Onion Chopped
- 1/2 cup Green Bell Pepper Chopped
- 1 tsp Olive Oil
- Salt & Pepper To Taste
Instructions
- Heat the olive oil in a frying pan over medium-high heat.
- Fry the tortillas in the oil until lightly browned and crispy. Remove from the pan and set aside.
- In the same frying pan, fry the eggs to your desired doneness. Set aside.
- In a saucepan, heat the tomato sauce over medium heat. Add the onion and green bell pepper and cook until tender.
- Season the tomato sauce with salt and pepper to taste.
- In another saucepan, heat the black beans over medium heat. Season with salt and pepper to taste.
- In another saucepan, cook the rice. Season with salt and pepper to taste.
- To serve, place two fried tortillas on a plate.
- Top with two fried eggs, and spoon some of the tomato sauce over the eggs.
- Serve with a side of rice and beans.
