Ingredients
- 2 Red Bell Peppers Large
- 1/2 cup Almonds Blanched
- 2 Tomatoes Ripe, Halved
- 2 Garlic Cloves Peeled
- 2 tbsp Red Wine Vinegar
- 1 tbsp Smoked Paprika
- 1/4 tsp Red Pepper Flakes (Adjust To Taste)
- 1/2 cup Extra-Virgin Olive Oil
- Salt To Taste
- Pepper To Taste
Instructions
- Preheat your oven to 400°F (200°C). Place the red bell peppers, tomatoes, and garlic cloves on a baking sheet, and roast them in the oven until the skins of the peppers and tomatoes are charred and blistered, about 15 minutes.
- Once roasted, remove the vegetables from the oven, and allow them to cool slightly. Then, peel the skin off the red peppers and tomatoes, and remove any seeds or stems.
- In a food processor or blender, combine the roasted red peppers, tomatoes, blanched almonds, red wine vinegar, smoked paprika, and red pepper flakes.
- While blending, slowly drizzle in the extra-virgin olive oil to create a smooth and creamy consistency.
- Season with salt and pepper to taste, and blend once more to fully incorporate the flavors.
- Transfer the Romesco Sauce to a serving bowl or jar, and refrigerate for at least 30 minutes before enjoying its delectable flavors.
