- 1/2 cup Unsalted Butter Melted

- Fill the bottom of a double boiler with water and bring it to a gentle simmer. If you don't have a double boiler, you can use a heatproof bowl placed over a saucepan with simmering water.
- In the top of the double boiler or the heatproof bowl, whisk together the egg yolks, lemon juice, salt, and cayenne pepper (if using).
- Place the double boiler or the bowl over the simmering water, ensuring that the bottom doesn't touch the water.
- Whisk the mixture continuously and vigorously for about 2 minutes, until it thickens slightly.
- Slowly drizzle in the melted butter while whisking constantly. Continue whisking until the sauce becomes smooth, silky, and thick enough to coat the back of a spoon.
- Remove the sauce from heat and taste. Adjust the seasoning with salt and lemon juice according to your preference.
- If not using immediately, keep the Hollandaise sauce warm by placing it in a heatproof bowl over a bowl of warm water.
