  • Preheat your oven to 375°F.
  • In a large mixing bowl, combine the flour, sugar, and salt. Using a pastry cutter or your fingertips, work in the cold, cubed butter until the mixture is crumbly.
  • Add the egg yolk and mix until a dough forms. If the dough seems too dry, add cold water, one tablespoon at a time.
  • Roll out the dough on a floured surface to fit a 9-inch tart pan.
  • Transfer the dough to the tart pan, trim the edges, and prick the bottom of the crust with a fork.
  • Bake the crust for 15-20 minutes, or until golden brown.
  • Remove from the oven and let it cool completely.
  • In a large mixing bowl, whisk together the heavy cream, sugar, and vanilla extract until stiff peaks form.
  • Spread the whipped cream evenly over the cooled tart crust.
  • Arrange the fresh fruit on top of the whipped cream in any design you like.
  • Serve immediately or refrigerate until ready to serve.
