  • Using a pastry blender or fork, cut the cold cubed butter into the flour mixture until it resembles coarse crumbs.
  • Gradually add ice-cold water, a few tablespoons at a time, and mix with a fork until the dough comes together.
  • Gather the dough into a ball, flatten it into a disk, and wrap it in plastic wrap.
  • Refrigerate the dough for at least 30 minutes before rolling out.

For the Pumpkin Filling:

  • In a mixing bowl, whisk together the pumpkin puree, granulated sugar, ground cinnamon, ground nutmeg, ground cloves, and vanilla extract.
  • Stir in the heavy cream until well combined.
  • Beat the eggs separately and fold them into the pumpkin mixture until smooth.

Assembling and Baking the Pie:

  • Preheat your oven to 200°C (400°F).
