- 1 cup Arborio Rice
- 4 cup Milk
- 1 cup Sugar
- 1 Cinnamon Stick
- 1 Lemon Peel
- 4 Egg Yolks
- Ground Cinnamon For Topping (Optional)
Instructions
- In a saucepan, bring 2 cups of water to a boil. Add the arborio rice and reduce heat to low. Simmer for 10-15 minutes, or until the rice is cooked.
- Add the milk, sugar, cinnamon stick, and lemon peel to the saucepan. Stir and bring to a boil.
- Reduce heat to low and simmer for 20-25 minutes, or until the mixture has thickened.
- In a mixing bowl, whisk together the egg yolks.
- Add a ladleful of the rice mixture to the egg yolks, whisking constantly to prevent the yolks from curdling.
- Pour the egg yolk mixture back into the saucepan, whisking constantly.
- Cook for an additional 2-3 minutes, or until the Arroz Doce is thick and creamy.
- Remove the cinnamon stick and lemon peel from the mixture and discard.
- Pour the Arroz Doce into individual serving dishes and let cool to room temperature.
- Sprinkle ground cinnamon on top, if desired.
- Serve and enjoy!
