- 1/4 cup Olive Oil

- 4 Garlic Cloves Minced
- 1 tbsp Fresh Rosemary Chopped

Instructions
- In a mixing bowl, whisk together the olive oil, lemon juice, minced garlic, chopped rosemary, chopped oregano, ground cumin, paprika, salt, and pepper to create the marinade.
- Place the lamb chops in a ziplock bag or an airtight container and pour the marinade over them. Ensure the chops are well coated. Seal the bag or container and refrigerate for at least 2 hours, allowing the flavors to infuse into the meat.
- Preheat your grill to medium-high heat.
- Remove the lamb chops from the marinade and let any excess marinade drip off.
- Place the lamb chops on the grill and cook for 4-6 minutes per side, depending on the desired level of doneness. For medium-rare, aim for an internal temperature of 145°F (63°C).
- Use tongs to flip the chops once during cooking, ensuring they develop a nice char on each side.
- Once cooked to your preference, remove the lamb chops from the grill and let them rest for a few minutes before serving.
- Serve the Paidakia hot with a side of lemon wedges and traditional Greek sides like roasted potatoes or a fresh Greek salad.
