Ingredients
- 8 Eggs Large
- 1/4 cup Milk
- Salt & Pepper To Taste
- 1 tbsp Butter
- 1/2 cup Grated Cheddar Cheese
- 1/4 cup Onion Diced
- 1/4 cup Bell Pepper Diced
- 1/4 cup Mushroom Diced
- 2 tbsp Fresh Parsley Chopped
Instructions
- In a mixing bowl, whisk together the eggs, milk, salt, and pepper until well-combined.
- Melt the butter in a non-stick frying pan over medium heat.
- Add the diced onion, bell pepper, and mushroom to the frying pan, and sauté for 2-3 minutes, until the vegetables are soft.
- Pour the egg mixture over the vegetables in the frying pan, and let it cook for 2-3 minutes until the bottom is set.
- Sprinkle the grated cheese over half of the omelet.
- Using a spatula, fold the other half of the omelet over the cheese, and cook for another minute or until the cheese is melted.
- Slide the omelet onto a plate, and sprinkle chopped parsley over the top.
- Serve hot, garnished with additional parsley if desired.
