Ingredients
- 1 lb Ground Beef Lean
- 1/2 cup Onion Diced
- 2 Garlic Cloves Minced
- 1 tbsp Chili Powder
- 1 tsp Ground Cumin
- 1/2 tsp Smoked Paprika
- 1/4 tsp Salt
- 1/4 tsp Black Pepper
- 1 can Black Beans Drained And Rinsed
- 1 cup Corn Kernels
- 1 Red Bell Pepper Diced
- 1/4 cup Fresh Cilantro Chopped
- 1/4 cup Salsa
- 6 Corn Tortillas Cut Into Quarters
- 1 cup Shredded Cheddar Cheese
Instructions
- Preheat your oven to 375°F.
- In a large skillet, cook the ground beef over medium heat until browned.
- Add the onion and garlic to the skillet and cook for 5 minutes or until the vegetables are tender.
- Stir in the chili powder, ground cumin, smoked paprika, salt, and black pepper.
- Add the black beans, corn kernels, red bell pepper, cilantro, and salsa to the skillet. Stir until well combined.
- Layer half of the tortilla quarters in the bottom of a 9x13 inch baking dish.
- Spoon half of the beef and bean mixture over the tortillas.
- Repeat the layering process with the remaining tortilla quarters and beef and bean mixture.
- Sprinkle the shredded cheddar cheese on top of the casserole.
- Bake for 30 minutes or until the cheese is melted and bubbly.
- Garnish with additional cilantro before serving. Enjoy!
