- 3 lbs Lamb Shoulder Bone-In
- 1 Lemon Juiced
- 4 Garlic Cloves Minced
- 2 tbsp Olive Oil
- 1 tbsp Dried Oregano
- 1 tbsp Dried Rosemary
- 1 tbsp Dried Thyme
- 1 tsp Salt
- 1/2 tsp Black Pepper
- 1 cup Chicken Broth Or
- Vegetable Broth
Instructions
- In a mixing bowl, combine the lemon juice, minced garlic, olive oil, dried oregano, dried rosemary, dried thyme, salt, and black pepper. Mix well to create the marinade.
- Place the lamb shoulder in a large resealable bag or a deep dish. Pour the marinade over the lamb, ensuring it is evenly coated. Seal the bag or cover the dish and refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to develop.
- Preheat your oven to 325°F (165°C).
- Transfer the marinated lamb shoulder to a large roasting pan. Add the chicken or vegetable broth to the pan, cover with the lid or tightly seal with aluminum foil.
- Place the roasting pan in the preheated oven and cook for approximately 4 hours, or until the lamb is tender and easily pulls apart with a fork.
- Remove the lid or foil and increase the oven temperature to 400°F (200°C). Roast the lamb for an additional 15-20 minutes to crisp up the outer layer.
- Once cooked, remove the lamb from the oven and let it rest for a few minutes before carving.
