  • In a mixing bowl, combine the lemon juice, minced garlic, olive oil, dried oregano, dried rosemary, dried thyme, salt, and black pepper. Mix well to create the marinade.
  • Place the lamb shoulder in a large resealable bag or a deep dish. Pour the marinade over the lamb, ensuring it is evenly coated. Seal the bag or cover the dish and refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to develop.
  • Preheat your oven to 325°F (165°C).
  • Transfer the marinated lamb shoulder to a large roasting pan. Add the chicken or vegetable broth to the pan, cover with the lid or tightly seal with aluminum foil.
