For The Beef:
- 1 lb Ground Beef
- 1 tbsp Vegetable Oil
- 1/2 Onion Chopped
- Garlic Cloves Minced
- 2 tbsp Soy Sauce
- 1 tbsp Gochujang (Korean Chili Paste)
- Salt To Taste
- Pepper To Taste
For The Kimchi:
- 1 cup Kimchi Chopped
- 1/4 cup Kimchi Juice
For The Tacos:
- 8 Corn Tortillas Small
- 1/2 cup Sour Cream
- 1 Avocado Sliced
- 1/4 cup Cilantro Chopped
- Lime Wedges, For Serving
Instructions
- Heat the vegetable oil in a large skillet over medium-high heat.
- Add the chopped onion and minced garlic to the skillet and cook for 2-3 minutes until softened.
- Add the ground beef to the skillet and cook until browned and fully cooked.
- Add the soy sauce, gochujang, salt, and pepper to the skillet and stir until well combined.
- Add the chopped kimchi and kimchi juice to the skillet and stir until heated through.
- Heat the corn tortillas on a griddle or in a dry skillet for 1-2 minutes on each side.
- To assemble the tacos, place a spoonful of the beef and kimchi mixture onto each tortilla.
- Top with sliced avocado, a dollop of sour cream, and chopped cilantro.
- Serve with lime wedges for squeezing over the top of the tacos.
