- 1 tbsp Vegetable Oil
- 1 pound Boneless, Skinless Chicken Thighs Cut Into Bite-Sized Pieces
- 1/2 pound Smoked Sausage Sliced
- 1 Onion Medium, Diced
- 1 Green Bell Pepper Diced
- 2 Celery Stalks Diced
- 3 Garlic Cloves Minced
- 1 can Diced Tomatoes Undrained
- 1 cup Long-Grain White Rice
- 1 cup Chicken Broth
- 2 tsp Cajun Seasoning
- 1 tsp Dried Thyme
- 1 tsp Paprika
- 1/2 tsp Salt
- 1/2 tsp Black Pepper
- 1/4 tsp Cayenne Pepper (Optional, For Extra Heat)
For Garnish:
- 2 Green Onions Chopped
- Fresh Parsley Chopped
Instructions
- Heat the vegetable oil in a Dutch oven or large pot over medium heat.
- Add the chicken thighs and smoked sausage to the pot. Sauté until the chicken is browned and the sausage is slightly crispy. Remove them from the pot and set aside.
- In the same pot, add the diced onion, green bell pepper, and celery. Sauté until the vegetables are softened, for about 5 minutes.
- Add the minced garlic and cook for an additional minute, until fragrant.
- Stir in the diced tomatoes (with their juice), long-grain white rice, chicken broth, Cajun seasoning, dried thyme, paprika, salt, black pepper, and cayenne pepper (if using).
- Return the cooked chicken thighs and smoked sausage to the pot and stir everything together.
- Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 20-25 minutes, or until the rice is tender and the flavors have melded.
- Remove from heat and let the Jambalaya sit, covered, for 5 minutes to allow the flavors to further develop.
