  • Preheat the oven to 350°F. Grease and flour two 8-inch cake pans.
  • In a mixing bowl, beat the egg yolks, sugar, and vanilla extract until light and fluffy.
  • In a separate bowl, beat the egg whites and salt until stiff peaks form.
  • Gradually fold the flour into the egg yolk mixture, then gently fold in the beaten egg whites.
  • Divide the batter evenly between the two cake pans, and bake for 20-25 minutes or until a toothpick comes out clean.
  • In a mixing bowl, beat the butter until light and fluffy.
  • Add the powdered sugar, cocoa powder, and heavy cream, and beat until smooth and creamy.
  • Once the cakes have cooled, spread a layer of chocolate buttercream on top of one of the cakes, then place the other cake on top.
  • To make the caramel layer, heat the sugar, water, and cream of tartar in a saucepan over medium-high heat, stirring constantly until the sugar dissolves.
  • Once the mixture starts to boil, stop stirring and let it continue to cook until it turns a golden brown color.
  • Pour the caramel over the top of the cake, using an offset spatula to spread it evenly.
  • Let the caramel cool and harden before serving.
