  • In a large mixing bowl, combine the flour and salt for the crust.
  • Add the chilled butter and use a pastry cutter or your hands to cut the butter into the flour mixture until it resembles coarse sand.
  • Gradually add the ice water, 1 tablespoon at a time, stirring with a fork until the dough comes together.
  • Shape the dough into a ball and flatten into a disk.
  • Wrap in plastic wrap and chill in the fridge for at least 30 minutes.
  • Preheat the oven to 375°F (190°C).
  • On a floured surface, roll out the dough into a circle about 12 inches in diameter.
  • Transfer the dough to a 9-inch pie dish and trim the edges.
  • Prick the bottom of the crust with a fork and chill for 10 minutes.
  • In a separate mixing bowl, whisk together the eggs, corn syrup, granulated sugar, brown sugar, melted butter, vanilla extract, and salt until well combined.
  • Arrange the pecan halves in the bottom of the pie crust. Pour the filling over the pecans.
  • Cover the edges of the pie crust with aluminum foil to prevent burning.
  • Bake for 40-45 minutes, or until the filling is set and the crust is golden brown.
  • Remove from the oven and let cool completely before slicing and serving.
