For The Crust:
- 1 1/4 cup All-Purpose Flour
- 1/2 tsp Salt
- 1/2 cup Unsalted Butter Chilled And Cut Into Small Pieces
- 3 or 4 tbsp Ice Water
For The Filling:
- 3 Eggs Large
- 1 cup Light Corn Syrup
- 1/2 cup Granulated Sugar
- 1/2 cup Brown Sugar
- 1/4 cup Unsalted Butter Melted
- 1 tsp Vanilla Extract
- 1/4 tsp Salt
- 1 1/2 cup Pecan Halves
Instructions
- In a large mixing bowl, combine the flour and salt for the crust.
- Add the chilled butter and use a pastry cutter or your hands to cut the butter into the flour mixture until it resembles coarse sand.
- Gradually add the ice water, 1 tablespoon at a time, stirring with a fork until the dough comes together.
- Shape the dough into a ball and flatten into a disk.
- Wrap in plastic wrap and chill in the fridge for at least 30 minutes.
- Preheat the oven to 375°F (190°C).
- On a floured surface, roll out the dough into a circle about 12 inches in diameter.
- Transfer the dough to a 9-inch pie dish and trim the edges.
- Prick the bottom of the crust with a fork and chill for 10 minutes.
- In a separate mixing bowl, whisk together the eggs, corn syrup, granulated sugar, brown sugar, melted butter, vanilla extract, and salt until well combined.
- Arrange the pecan halves in the bottom of the pie crust. Pour the filling over the pecans.
- Cover the edges of the pie crust with aluminum foil to prevent burning.
- Bake for 40-45 minutes, or until the filling is set and the crust is golden brown.
- Remove from the oven and let cool completely before slicing and serving.
