  • In a large saucepan, heat the olive oil over medium heat.
  • Add the onion and garlic and cook until softened, about 5 minutes.
  • Add the diced tomatoes, vegetable broth, basil, and oregano. Stir to combine.
  • Bring the mixture to a boil, then reduce heat to low and let simmer for 15 minutes.
  • Use an immersion blender or transfer the mixture to a blender and blend until smooth.
  • Stir in the heavy cream and season with salt and pepper to taste.
  • Preheat a griddle or large skillet over medium heat.
  • Spread butter on one side of each bread slice.
  • On the other side of 4 bread slices, evenly distribute the cheddar, mozzarella, and parmesan cheeses, chopped basil, and garlic powder.
  • Top each with the remaining bread slices, butter side facing up.
  • Place the sandwiches on the griddle or skillet and cook until the bread is golden brown and the cheese is melted, about 3-4 minutes on each side.
  • Serve the grilled cheese sandwiches with the tomato soup for dipping.
