Ingredients
For Tomato Soup:
- 2 tbsp Olive Oil
- 1 Onion Diced
- 2 Garlic Cloves Minced
- 2 cans Diced Tomatoes
- 2 cups Vegetable Broth
- 1 tsp Dried Basil
- 1 tsp Dried Oregano
- 1/2 cup Heavy Cream
- Salt & Pepper To Taste
For Grilled Cheese:
- 8 slices Bread of Choice
- 4 tbsp Unsalted Butter Softened
- 1 cup Shredded Cheddar Cheese
- 1 cup Shredded Mozzarella Cheese
- 1/2 cup Grated Parmesan Cheese
- 1/4 cup Chopped Fresh Basil
- 1/4 tsp Garlic Powder
Instructions
- In a large saucepan, heat the olive oil over medium heat.
- Add the onion and garlic and cook until softened, about 5 minutes.
- Add the diced tomatoes, vegetable broth, basil, and oregano. Stir to combine.
- Bring the mixture to a boil, then reduce heat to low and let simmer for 15 minutes.
- Use an immersion blender or transfer the mixture to a blender and blend until smooth.
- Stir in the heavy cream and season with salt and pepper to taste.
- Preheat a griddle or large skillet over medium heat.
- Spread butter on one side of each bread slice.
- On the other side of 4 bread slices, evenly distribute the cheddar, mozzarella, and parmesan cheeses, chopped basil, and garlic powder.
- Top each with the remaining bread slices, butter side facing up.
- Place the sandwiches on the griddle or skillet and cook until the bread is golden brown and the cheese is melted, about 3-4 minutes on each side.
- Serve the grilled cheese sandwiches with the tomato soup for dipping.
