Ingredients
For The Choux Pastry:
- 1/2 cup Water
- 1/4 cup Unsalted Butter
- 1/4 tsp Salt
- 1/2 cup All-Purpose Flour
- 2 Eggs Large
For The Filling:
- 1 cup Heavy Cream
- 1 tsp Vanilla Extract
- 1/4 cup Powdered Sugar
For The Chocolate Glaze:
- 1/2 cup Semisweet Chocolate Chips
- 2 tbsp Unsalted Butter
- 1 tbsp Light Corn Syrup
Instructions
For The Choux Pastry:
- Preheat your oven to 425°F.
- In a medium-sized saucepan, heat the water, butter, and salt over medium heat until the butter has melted.
- Add in the flour and stir until a dough forms.
- Remove the pan from the heat and let it cool for a few minutes.
- Beat in the eggs one at a time until the mixture is smooth and shiny.
- Transfer the dough to a piping bag and pipe 4-inch strips onto a baking sheet lined with parchment paper.
- Bake for 15 minutes at 425°F, then reduce the temperature to 375°F and bake for an additional 10-15 minutes until the eclairs are golden brown and crisp.
For The Filling:
- Whip the heavy cream, vanilla extract, and powdered sugar until stiff peaks form.
- Transfer the mixture to a piping bag and fill the cooled eclairs.
For The Chocolate Glaze:
- Melt the chocolate chips, butter, and corn syrup together in a double boiler, in the microwave, or in a saucepan over water.
- Dip the tops of the eclairs in the glaze and let them cool before serving.
