Ingredients
- 1 head Cauliflower Riced
- 1 tbsp Vegetable Oil
- 1/2 cup Onion Diced
- 1/2 cup Carrot Diced
- 1/2 cup Frozen Peas
- 2 Garlic Cloves Minced
- 3 tbsp Soy Sauce
- 1 tbsp Sesame Oil
- 1/4 tsp Black Pepper
Optional Toppings:
- Scallions Chopped
- Mushrooms Sliced
- Bell Pepper Diced
Instructions
- Remove the leaves and stem from the cauliflower and cut it into small florets.
- Pulse the cauliflower florets in a food processor until they resemble rice. Set aside.
- In a large skillet or wok, heat the vegetable oil over medium-high heat.
- Add the onion and carrot and cook for 3-4 minutes, or until they start to soften.
- Add the frozen peas and minced garlic to the skillet and cook for an additional 2-3 minutes.
- Add the riced cauliflower to the skillet and cook for 5-6 minutes, or until it is tender and lightly browned.
- Add the soy sauce, sesame oil, and black pepper to the skillet and stir to combine.
