Ingredients
- 1 can Jackfruit (In Brine Or Water), Drained And Rinsed (400g)
- 1/2 tsp Smoked Paprika
- 1/2 tsp Cumin
- 1/2 tsp Chili Powder
- 1/4 tsp Garlic Powder
- 1 tbsp Olive Oil
- 4-6 Corn Tortillas
- 1/2 cup Onion Diced
- 1/2 cup Red Bell Pepper Diced
- 1 Avocado Sliced
- Salt & Pepper To Taste
- Cilantro For Garnish
- Lime Wedges For Serving
Instructions
- Preheat a large skillet over medium-high heat.
- Drain and rinse the jackfruit, then shred it with your hands or a fork.
- In a small bowl, mix together the smoked paprika, cumin, chili powder, garlic powder, salt, and pepper.
- Add the olive oil to the skillet and sauté the onion and red bell pepper until tender, about 3-4 minutes.
- Add the jackfruit and spice mixture to the skillet and stir well to combine. Cook for an additional 5-7 minutes, stirring occasionally.
- Warm the tortillas in a dry skillet or oven.
- Assemble the tacos by adding the jackfruit mixture to each tortilla, then topping with avocado slices and cilantro.
