- 4 Bell Peppers Fresh Halved And Seeded
- 1 cup Quinoa Cooked
- 1 Zucchini Diced
- 1 Red Onion Diced
- 1 Red Bell Pepper Diced
- 1 Yellow Bell Pepper Diced
- 2 Garlic Cloves Minced
- 2 tbsp Olive Oil
- 1 tsp Salt
- 1/2 tsp Black Pepper
- 1/4 tsp Paprika
- 1/4 tsp Cumin
- 1/4 cup Shredded Parmesan Cheese
Instructions
- Preheat the grill or grill pan to medium-high heat.
- In a mixing bowl, combine the diced zucchini, red onion, red bell pepper, yellow bell pepper, garlic, olive oil, salt, black pepper, paprika, and cumin. Toss to coat.
- Grill the vegetables until they are charred and tender, about 8-10 minutes.
- In a separate mixing bowl, combine the cooked quinoa with the grilled vegetables.
- Spoon the quinoa and vegetable mixture into each of the bell pepper halves.
- Place the stuffed bell peppers in a baking dish and sprinkle the parmesan cheese on top.
- Bake in the oven at 350°F for 15 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and allow the stuffed bell peppers to cool for a few minutes before serving.
