  • Place the potatoes, unpeeled, in a large pot and cover them with cold water. Bring the water to a boil and cook the potatoes until they are fork-tender, about 20-25 minutes.
  • Drain the potatoes and let them cool slightly. Once cool enough to handle, peel the potatoes and pass them through a potato ricer or mash them until smooth.
  • In a large mixing bowl, combine the mashed potatoes, flour, salt, and beaten egg. Mix gently until the ingredients come together to form a soft dough.
  • Transfer the dough to a lightly floured surface and divide it into four equal portions. Roll each portion into a long rope, about 1/2 inch in diameter.
