Ingredients
For The Meringue:
- 4 Egg Whites
- 1/2 cup Granulated Sugar
- 1/4 tsp Cream Of Tartar
For The Vanilla Custard:
- 2 cup Whole Milk
- 4 Egg Yolks
- 1/4 cup Granulated Sugar
- 2 tbsp Cornstarch
- 1 tsp Vanilla Extract
- Powdered Sugar Optional
Instructions
For the Meringue:
- In a mixing bowl, beat the egg whites on medium speed until soft peaks form.
- Gradually add the sugar and cream of tartar while continuing to beat until stiff peaks form.
- Heat up the milk and add the beaten egg whites spoon by spoon to it and cook for 2-3 minutes each side then gently take it out from the milk place it onto a big bowl.
- (Other option for baked hard meringue: Using two spoons, shape the meringue into small quenelle-like islands and place them on a baking sheet lined with parchment paper. Preheat the oven to 200°F (95°C) and bake the meringue islands for 2 hours or until they are crisp on the outside and slightly chewy on the inside. Let them cool completely.)
For the Vanilla Custard:
- Use the milk in which you cooked the egg whites.
- In a mixing bowl, whisk together the egg yolks, sugar, and cornstarch until well combined.
- Slowly pour the hot milk into the egg mixture, whisking constantly.
- Transfer the mixture back to the saucepan and cook over medium heat, stirring continuously until the custard thickens.
- Remove from heat, stir in the vanilla extract, and let the custard cool.
Assembly:
- Pour the vanilla custard into each serving bowl and place the cooked meringue on top, sprinkle with powdered sugar on top.
- If baked, place a meringue island in each serving bowl. Pour the vanilla custard over the meringue islands, allowing them to float in the custard.
- Refrigerate for at least 1 hour to allow the flavors to meld.
