- 1 1/2 cup Couscous
- 1 1/2 cup Vegetable Broth Or
- Chicken Broth
- 2 tbsp Olive Oil
- 1 Red Bell Pepper Small, Diced
- 1 Yellow Bell Pepper Small, Diced
- 1 Cucumber Small, Diced
- 1 Red Onion Small, Finely Chopped
- 1 cup Cherry Tomatoes Halved
- 1/4 cup Fresh Parsley Chopped
- 1/4 cup Fresh Mint Chopped
- 1 Lemon Juice
- Salt To Taste
- Pepper To Taste
Instructions
- In a medium-sized pot, bring the vegetable or chicken broth and olive oil to a boil.
- Remove the pot from heat and stir in the couscous. Cover the pot with a lid and let it sit for 5 minutes.
- After 5 minutes, fluff the couscous with a fork to break up any clumps. Set it aside to cool.
- In a mixing bowl, combine the diced red and yellow bell peppers, cucumber, red onion, cherry tomatoes, chopped parsley, and chopped mint.
