Ingredients
- 1 cup Long-Grain White Rice
- 8 cup Water
- 1 tbsp Vegetable Oil
- 1 inch Ginger Grated
- 2 Garlic Cloves Minced
- 4 cup Chicken Broth Or
- Vegetable Broth
- 1 tsp Salt (Adjust To Taste)
Toppings (Optional):
- Hard-Boiled Eggs
- Cilantro Minced
- Soy Sauce Or
- Tamari
- Green Onions Sliced
- Shallots Fried
Instructions
- Rinse the rice under cold water until the water runs clear. Drain and set aside.
- In a large pot, heat the vegetable oil over medium heat. Add the grated ginger and minced garlic, and sauté for 1-2 minutes until fragrant.
- Add the rinsed rice to the pot and stir to coat it with the ginger and garlic mixture.
- Pour in the water and bring it to a boil. Once boiling, reduce the heat to low and cover the pot with a lid. Allow the rice to simmer for 1 hour, stirring occasionally to prevent sticking.
- After 1 hour, the rice will have broken down and thickened the liquid. If you prefer a smoother consistency, you can use the back of a wooden spoon to gently mash the rice.
- Stir in the broth and salt, and continue cooking for an additional 10-15 minutes until the Congee reaches your desired consistency.
- Remove the pot from the heat and let it cool slightly. Serve the Congee in bowls and garnish with your choice of toppings, such as sliced green onions, fried shallots, minced cilantro, soy sauce or tamari, hard-boiled eggs, and sliced cooked chicken or pork.
