  • Melt the chocolate and unsalted butter in a double boiler or in a microwave in a heatproof bowl, stirring occasionally until the mixture is smooth. Set aside to cool.
  • In a mixing bowl, whisk the egg yolks and granulated sugar until the mixture is light and fluffy.
  • Add the cooled chocolate mixture and vanilla extract to the mixing bowl and whisk until well combined.
  • In another mixing bowl, beat the egg whites with an electric mixer until stiff peaks form.
  • In a third mixing bowl, beat the heavy cream with an electric mixer until stiff peaks form.
  • Gently fold the beaten egg whites into the chocolate mixture with a rubber spatula.
  • Gently fold the beaten heavy cream into the chocolate mixture with a rubber spatula.
  • Divide the chocolate mousse evenly into four serving dishes.
  • Chill the chocolate mousse in the refrigerator for at least 2 hours before serving.
