Ingredients
- 2 Chicken Breasts Skinless, Boneless; Cooked And Shredded
- 1 Red Bell Pepper Sliced
- 1 Green Bell Pepper Sliced
- 1 Onion Sliced
- 1/2 tsp Garlic Powder
- 1 tbsp Olive Oil
- 1 tsp Chili Powder
- 1/2 tsp Cumin
- 1/2 tsp Paprika
- 8 Flour Tortillas Medium
- Salt & Pepper To Taste
- 2 cups Shredded Cheddar Cheese
For Serving:
Instructions
- In a large skillet over medium heat, sauté the sliced bell peppers and onions until they are tender.
- Add the cooked and shredded chicken to the skillet with the bell peppers and onions, along with the chili powder, cumin, paprika, garlic powder, salt, and pepper.
- Stir to combine and cook for an additional 2-3 minutes until the chicken is heated through and coated in the spices.
- Heat a griddle or grill pan over medium heat. Spray the pan with cooking spray.
- Place a tortilla on the griddle and sprinkle with 1/4 cup of shredded cheese.
- Spoon 1/4 of the chicken and vegetable mixture on top of the cheese.
- Top with another 1/4 cup of shredded cheese and place another tortilla on top.
- Cook for 2-3 minutes on each side, until the cheese is melted and the tortilla is crispy and golden brown.
- Repeat with the remaining tortillas and chicken mixture.
- Cut the quesadillas into quarters and serve hot.
