- 2 Medium-Sized Russet Potatoes Peeled And Diced
- 2 tbsp Vegetable Oil
- 1 tsp Ground Cumin
- 1 tsp Smoked Paprika
- 1/2 tsp Garlic Powder
- 1/2 tsp Onion Powder
- Salt And Pepper To Taste
- 4 Corn Tortillas
Toppings:
- 1 cup Shredded Lettuce
- 1/2 cup Diced Tomatoes
- 1/4 cup Shredded Cheese
- 1/4 cup Sour Cream
- 1/4 cup Salsa
- 1/4 cup Fresh Cilantro Chopped
Instructions
- Preheat your oven to 400°F (200°C) if you prefer to warm your tortillas in the oven.
- In a large non-stick skillet, heat the vegetable oil over medium heat. Add the diced potatoes and cook, stirring occasionally, for 10-12 minutes or until they are tender and golden brown.
- In a small mixing bowl, combine the ground cumin, smoked paprika, garlic powder, onion powder, salt, and pepper. Mix well.
- Sprinkle the spice mixture over the potatoes and stir until they are evenly coated. Continue to cook for another 3-5 minutes, stirring occasionally, until the spices are fragrant and the potatoes are crispy.
- Meanwhile, prepare the tortillas. If using an oven or toaster oven, wrap the tortillas in foil and warm them for 5 minutes. Alternatively, you can warm the tortillas in a dry skillet over low heat for 30 seconds on each side.
- To assemble the tacos, place a layer of shredded lettuce on each tortilla. Top with a generous portion of crispy potatoes, followed by diced tomatoes, shredded cheese, sour cream or Greek yogurt, salsa, and chopped cilantro (if using).
- Fold the tortillas in half and serve immediately.
