For the Pie Crust:

  • In a large mixing bowl, combine the flour, salt, and sugar.
  • Add the butter to the bowl and use a pastry cutter or food processor to cut the butter into the flour mixture until it resembles coarse crumbs.
  • Gradually add the ice water, one tablespoon at a time, and mix until the dough comes together.
  • Form the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

For The Filling:

  • Preheat the oven to 375°F.
  • In a large mixing bowl, combine the sliced apples, granulated sugar, brown sugar, flour, cinnamon, nutmeg, and salt.
  • Mix well and set aside.

To Assemble the Pie:

  • On a floured surface, roll out the pie dough to a 12-inch circle.
  • Transfer the dough to a 9-inch pie dish and trim the edges.
  • Fill the pie crust with the apple filling and dot with small pieces of butter.
  • Roll out the remaining dough and use a pastry cutter or knife to create a lattice design over the top of the pie.
  • Brush the top of the pie with a little bit of water and sprinkle with a little bit of sugar.
  • Cover the edges of the pie with aluminium foil to prevent burning.
  • Bake for 45-50 minutes, or until the crust is golden brown and the filling is bubbling.
  • Remove the pie from the oven and let it cool for at least 15 minutes before serving.
