  • Place a veal cutlet between two sheets of plastic wrap. Using a meat mallet or rolling pin, gently pound the cutlet until it becomes about 1/4 inch thick. Repeat with the remaining cutlets.
  • Season each veal cutlet with salt and pepper. Place a slice of prosciutto on top of each cutlet, followed by two fresh sage leaves.
  • Roll up each cutlet tightly and secure with skewers or toothpicks to hold the roll in place.
  • Dredge each rolled veal cutlet in flour, shaking off any excess.
  • In a large skillet, heat the butter and olive oil over medium heat. Once the butter has melted and the oil is hot, add the veal rolls to the skillet.
  • Cook the Saltimbocca for about 3-4 minutes per side, or until golden brown and cooked through. Use tongs to carefully turn the rolls.
  • Remove the Saltimbocca from the skillet and transfer them to a plate. Tent the plate with foil to keep them warm.
  • Pour the white wine into the skillet, scraping the bottom to loosen any browned bits. Cook for about 2 minutes, or until the wine has slightly reduced.
  • Return the Saltimbocca to the skillet and spoon the wine sauce over them.
  • Serve the homemade Saltimbocca immediately, allowing the flavors to shine.
