Instructions

  • Heat the vegetable oil in a Dutch oven or large pot over medium heat.
  • Add the chicken thighs and smoked sausage to the pot. Sauté until the chicken is browned and the sausage is slightly crispy. Remove them from the pot and set aside.
  • In the same pot, add the diced onion, green bell pepper, and celery. Sauté until the vegetables are softened, for about 5 minutes.
  • Add the minced garlic and cook for an additional minute, until fragrant.
  • Stir in the diced tomatoes (with their juice), long-grain white rice, chicken broth, Cajun seasoning, dried thyme, paprika, salt, black pepper, and cayenne pepper (if using).
  • Return the cooked chicken thighs and smoked sausage to the pot and stir everything together.
  • Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 20-25 minutes, or until the rice is tender and the flavors have melded.
  • Remove from heat and let the Jambalaya sit, covered, for 5 minutes to allow the flavors to further develop.
  • Garnish with chopped green onions and fresh parsley.
  • Serve hot and savor the authentic flavors of this Cajun delight.
