For The Crust:
- 1 1/2 cup All-Purpose Flour
- 1/2 tsp Salt
- 1/3 cup Unsalted Butter Cold, Cubed
- 1 Egg Yolk
- 3 tbsp Ice Water
For The Filling:
- 1 tbsp Olive Oil
- 1 Onion Finely Chopped
- 1 Red Bell Pepper Diced
- 1 Green Bell Pepper Diced
- 1 Zucchini Diced
- 1 cup Cooked Ham Diced (Optional)
- 1/2 cup Grated Mozzarella Cheese
- 4 Eggs
- 1/2 cup Whole Milk
- Salt To Taste
- Pepper To Taste
Instructions
For the Crust:
- In a mixing bowl, combine the all-purpose flour and salt. Add the cold cubed butter and use a pastry cutter or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs.
- In a small bowl, whisk together the egg yolk and ice water. Gradually add the egg mixture to the flour mixture, mixing until the dough comes together.
- Turn the dough onto a lightly floured surface and knead it a few times until smooth. Shape it into a disk, wrap it in plastic wrap, and refrigerate for 30 minutes.
For the Filling:
- In a skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until it becomes translucent.
- Add the diced red and green bell peppers, zucchini, and cooked ham (if using) to the skillet. Cook for about 5 minutes until the vegetables are tender. Remove from heat and let it cool.
- Preheat your oven to 350°F (175°C) and grease a tart pan or pie dish.
- On a lightly floured surface, roll out the chilled dough into a circle large enough to fit your tart pan or pie dish. Transfer the rolled-out dough to the prepared pan, pressing it gently into the bottom and sides.
- Spread the cooked vegetable and ham mixture evenly over the crust. Sprinkle the grated mozzarella cheese on top.
- In a separate bowl, whisk together the eggs, milk, salt, and pepper. Pour the egg mixture over the vegetables and cheese in the tart pan.
- Place the tart pan on a baking sheet and bake in the preheated oven for about 40-45 minutes, or until the crust is golden and the filling is set.
- Remove from the oven and let the Argentinian Tartas cool for a few minutes before slicing and serving.
