  • Preheat your oven to 375°F.
  • Place the spaghetti squash halves in a large skillet, cut side down. Add enough water to cover the bottom of the skillet.
  • Cover the skillet and cook the squash over medium heat for 20 minutes or until tender.
  • Remove the squash from the skillet and let it cool for a few minutes.
  • Use a fork to scrape the flesh of the squash into a mixing bowl.
  • In the same skillet, cook the ground turkey over medium heat until browned.
  • Add the onion, red bell pepper, and garlic to the skillet and cook for 5 minutes or until the vegetables are tender.
  • Stir in the tomato sauce, chicken broth, dried basil, dried oregano, salt, and black pepper.
  • Bring the mixture to a simmer and cook for 5 minutes.
  • Add the spaghetti squash to the skillet and stir until fully coated in the sauce.
  • Transfer the mixture to a 9x13 inch baking dish or back into the emptied squash and spread it out evenly.
  • Sprinkle the shredded mozzarella cheese on top.
  • Bake for 20 minutes or until the cheese is melted and bubbly.
  • Garnish with chopped fresh parsley before serving. Enjoy!
