Ingredients
- 1 Spaghetti Squash Medium, Halved And Seeded
- 1 lb Ground Turkey
- 1/2 cup Onion Diced
- 1/2 cup Red Bell Pepper Diced
- 2 Garlic Cloves Minced
- 1/2 cup Tomato Sauce
- 1/2 cup Chicken Broth
- 1 tsp Dried Basil
- 1/2 tsp Dried Oregano
- 1/4 tsp Salt
- 1/4 tsp Black Pepper
- 1/2 cup Shredded Mozzarella Cheese
- 2 tbsp Fresh Parsley Chopped
Instructions
- Preheat your oven to 375°F.
- Place the spaghetti squash halves in a large skillet, cut side down. Add enough water to cover the bottom of the skillet.
- Cover the skillet and cook the squash over medium heat for 20 minutes or until tender.
- Remove the squash from the skillet and let it cool for a few minutes.
- Use a fork to scrape the flesh of the squash into a mixing bowl.
- In the same skillet, cook the ground turkey over medium heat until browned.
- Add the onion, red bell pepper, and garlic to the skillet and cook for 5 minutes or until the vegetables are tender.
- Stir in the tomato sauce, chicken broth, dried basil, dried oregano, salt, and black pepper.
- Bring the mixture to a simmer and cook for 5 minutes.
- Add the spaghetti squash to the skillet and stir until fully coated in the sauce.
- Transfer the mixture to a 9x13 inch baking dish or back into the emptied squash and spread it out evenly.
- Sprinkle the shredded mozzarella cheese on top.
- Bake for 20 minutes or until the cheese is melted and bubbly.
- Garnish with chopped fresh parsley before serving. Enjoy!
