Ingredients
- 1 tbsp Olive Oil
- 1/2 cup Diced Onion
- 2 Garlic Cloves Minced
- 1 tsp Ground Cumin
- 1 tsp Ground Coriander
- 1 tsp Ground Turmeric
- 1/4 tsp Cayenne Pepper
- 1/2 tsp Salt
- 1/4 tsp Black Pepper
- 1 Can Diced Tomatoes (14 Oz), Undrained
- 1 Can Chickpeas (14 Oz), Drained And Rinsed
- 2 cups Fresh Spinach Leaves
- 1/4 cup Plain Yogurt
- 2 tbsp Chopped Fresh Cilantro Leaves For Garnish
Instructions
- Heat the olive oil in a large pot over medium heat. Add the onion and garlic and sauté for 2-3 minutes or until the onion is translucent.
- Add the cumin, coriander, turmeric, cayenne pepper, salt, and black pepper. Stir to combine.
- Add the diced tomatoes and chickpeas. Stir to combine.
- Bring the curry to a simmer and let it cook for 15-20 minutes, stirring occasionally, until the flavors have melded together and the chickpeas are tender.
- Add the fresh spinach leaves and stir until wilted.
- Remove the curry from heat and stir in the plain yogurt.
- Serve hot with chopped fresh cilantro leaves for garnish.
