Ingredients
- 1 tbsp Olive Oil
- 1/2 cup Diced Onion
- 1/2 cup Diced Bell Pepper
- 1/2 cup Diced Zucchini
- 1 tbsp Chili Powder
- 1 tsp Ground Cumin
- 1/2 tsp Smoked Paprika
- 1/4 tsp Cayenne Pepper
- 1/2 tsp Salt
- 1/4 tsp Black Pepper
- 1 Can Diced Tomatoes (14 Oz), Undrained
- 1 Can Black Beans (14 Oz), Drained And Rinsed
- 1 Can Kidney Beans (14 Oz), Drained And Rinsed
- 1 cup Vegetable Broth
Instructions
- Heat the olive oil in a large pot over medium heat. Add the onion, bell pepper, and zucchini and sauté for 5 minutes or until the vegetables are tender.
- Add the chili powder, cumin, smoked paprika, cayenne pepper, salt, and black pepper. Stir to combine.
- Add the diced tomatoes, black beans, kidney beans, and vegetable broth. Stir to combine.
- Bring the chili to a simmer and let it cook for 20-25 minutes, stirring occasionally, until the vegetables are tender and the flavors have melded together.
- Serve hot with sour cream, shredded cheddar cheese, and chopped cilantro for garnish.
